Bruschetta Dip

This Bruschetta Dip recipe is one of my favorite appetizers when I’m craving classic Italian bruschetta but want something a little creamier. Inspired by the fresh flavors of traditional tomato bruschetta and warm baked cheese dips I’ve packed my dish with juicy tomatoes and fresh basil along with garlic and a rich cheese mixture.

Creamy baked Bruschetta Dip topped with fresh tomatoes and basil and served with golden toasted baguette slices

It’s also loaded with flavor from the olive oil and balsamic vinegar and it’s so easy to customize based on whatever fresh herbs or cheeses you have in your fridge or toppings you want to add! I also love preparing the tomato mixture ahead of time and serving it alongside Italian Sausage Soup for a cozy Italian-inspired meal!

The best part is how the creamy melted cheese balances the fresh tomatoes while the toasted bread adds a delicious crunch. I love making this for family gatherings and weekend parties because it feels special without requiring complicated ingredients or too much time in the kitchen.

Ingredients

Fresh tomatoes and basil with cream cheese and mozzarella and other ingredients for Bruschetta Dip

Here is what I use for this recipe :

  • Cherry tomatoes: Fresh cherry tomatoes provide juicy sweetness and a slightly tangy flavor while creating the colorful topping that gives this dip its classic bruschetta character.
  • Cream cheese: Softened full-fat cream cheese creates the rich and smooth foundation of the dip while helping the melted cheeses hold together.
  • Sour cream: Sour cream loosens the cream cheese mixture and adds a gentle tang that balances the richness of the baked cheese.
  • Mozzarella cheese: Shredded mozzarella melts into soft and stretchy pockets while developing delicate golden spots during baking.
  • Parmesan cheese: Parmesan adds savory depth and a lightly salty finish while encouraging subtle browning across the cheese surface.
  • Fresh basil: Fresh basil brings the distinctive herbal aroma of Italian bruschetta while adding bright green flecks throughout the tomato topping.
  • Garlic: Minced garlic provides aromatic sharpness and enhances the natural sweetness of the tomatoes.
  • Extra virgin olive oil: One tablespoon coats the tomato mixture while the remaining tablespoon lightly coats the baguette slices for crisp toasted edges.
  • Balsamic vinegar: Balsamic vinegar adds mild acidity and a subtle sweetness that balances the creamy cheese and juicy tomatoes.
  • Salt: Salt seasons the tomatoes and helps bring out their natural juices while strengthening their fresh flavor.
  • Black pepper: Freshly ground black pepper adds gentle warmth and a savory finish to the tomato mixture.
  • French baguette: A baguette sliced into approximately 16 pieces provides crunchy toasted bread for scooping the warm cheese and fresh tomato topping.

Tools I Use :

  • Wooden cutting board: Provides a stable preparation area for cutting the cherry tomatoes and chopping the basil and garlic and slicing the baguette.
  • Sharp kitchen knife: Cuts the tomatoes into scoopable pieces and finely minces the garlic while keeping the basil from becoming excessively bruised.
  • Medium mixing bowl: Holds the tomato topping while the olive oil and balsamic vinegar and seasonings are gently combined.
  • Large mixing bowl: Provides enough space to combine the cream cheese and sour cream and shredded cheeses without spilling.
  • Silicone spatula: Helps combine the softened cheese mixture and spread it evenly into the baking dish.
  • Measuring cups and spoons: Ensure consistent measurements for the cheeses and vegetables and liquids and seasonings.
  • Small ceramic baking dish: Holds the creamy cheese mixture in a thick layer and allows the dip to heat evenly while developing lightly golden edges.
  • Baking tray: Supports the baguette slices during toasting and allows their edges to become evenly crisp.
  • Oven: Melts the cheese mixture and lightly browns its surface while also toasting the baguette slices.
  • White serving plates: Hold individual portions of the finished dip alongside toasted baguette slices for easy serving.

Instructions

Step 1: Dice the tomatoes and chop the basil and garlic

Fresh cherry tomatoes diced beside chopped basil and minced garlic for Bruschetta Dip

Start by washing 2 cups of cherry tomatoes and drying them thoroughly. Cut each tomato into small irregular pieces so the topping will be easy to scoop while still retaining plenty of fresh texture. Next mince 2 garlic cloves and roughly chop 1/4 cup fresh basil. Keep the chopped ingredients in loose piles on a cutting board with the juicy tomatoes slightly separated from the basil and garlic so their individual colors and textures remain visible.

Tip: Dry the tomatoes before cutting to prevent extra water from collecting in the finished dip and keep the pieces slightly uneven for a rustic texture.

Step 2: Mix the fresh tomato bruschetta topping

Cherry tomatoes and basil mixed with garlic and olive oil and balsamic vinegar

Transfer the chopped cherry tomatoes and basil and garlic into a medium mixing bowl. Add 1 tablespoon of olive oil along with 1 teaspoon of balsamic vinegar and the measured salt and black pepper. Gently fold everything together until the tomatoes are lightly coated and the basil is scattered throughout. Allow the mixture to rest while preparing the cheese base so the tomatoes release a little juice and absorb the garlic and balsamic flavors.

Tip: Fold the tomatoes gently instead of crushing them so they keep their fresh texture and do not release too much liquid before serving.

Step 3: Combine the creamy cheese filling

Place 8 ounces of softened cream cheese in a large mixing bowl and add 1/2 cup of sour cream. Stir until the mixture becomes thick and creamy with only a few soft streaks remaining. Add 1 cup of shredded mozzarella and 1/4 cup of grated Parmesan. Fold the cheeses into the creamy base until the shreds are distributed throughout and the mixture looks slightly textured rather than completely smooth.

Tip: Let the cream cheese soften before mixing so the sour cream blends easily and the shredded cheese distributes evenly without excessive stirring.

Step 4: Spread the cheese mixture into the baking dish

Transfer the entire cheese mixture into a lightly greased small ceramic baking dish. Spread it across the bottom until it forms a thick and fairly even layer while leaving a few natural ridges on the surface. Make sure the cheese reaches the edges so the entire layer warms evenly during baking. The mixture should look pale and firm with visible mozzarella shreds before it enters the oven.

Tip: Use a small baking dish that holds the mixture in a thick layer because an oversized dish can make the cheese dry out around the edges.

Step 5: Bake the cheese until melted and golden

Preheat the oven to 375 degrees Fahrenheit or 190 degrees Celsius and place the filled baking dish on the middle rack. Bake for approximately 25 to 30 minutes until the cheese is hot and bubbling around the edges. The top should develop scattered golden spots while the center remains creamy and soft. Remove the baking dish from the oven once the cheese is fully heated and lightly browned because excessive baking can cause the dairy mixture to separate.

Tip: Watch for gentle bubbling and scattered golden spots rather than waiting for the entire surface to brown because the center should stay creamy.

Step 6: Toast the baguette slices until crisp

While the cheese finishes baking cut 1 small baguette into approximately 16 slices with slightly uneven thickness. Arrange the bread in a single loose layer on a baking tray and lightly coat the pieces with the remaining 1 tablespoon of olive oil. Toast the slices at 375 degrees Fahrenheit for approximately 6 to 8 minutes until their edges become lightly golden and the surfaces turn crisp. Rotate the slices halfway through if necessary and remove them before they become excessively dark.

Tip: Keep the baguette slices slightly thick so they develop crunchy edges while remaining sturdy enough to hold the warm cheese and juicy tomatoes.

Step 7: Spoon the fresh tomatoes over the melted cheese

Allow the baked cheese to settle for about 2 minutes and gently stir the tomato mixture once more. Spoon the tomatoes and basil over the warm cheese while leaving most of the excess tomato liquid behind in the mixing bowl. Spread the topping loosely across the surface while leaving a few golden cheese patches visible around the edges. The finished dip should have a fresh red and green topping contrasting with the warm creamy cheese underneath.

Tip: Add the tomatoes just before serving and leave excess juices behind so the warm cheese remains thick and the topping tastes fresh.

Step 8: Serve a creamy portion with toasted baguette

Single serving of creamy Bruschetta Dip with fresh tomatoes and four toasted baguette slices

Scoop approximately one-quarter of the warm finished dip onto a small white serving plate. Allow the creamy cheese to spread naturally beneath the bright tomato topping while keeping several basil flecks and golden cheese patches visible. Place 4 toasted baguette slices casually beside the portion and serve immediately. The final plate should show soft melted cheese and juicy tomatoes with crisp golden bread for a satisfying contrast in every bite.

Tip: Serve the dip while the cheese is still warm and stretchy because the creamy texture contrasts best with freshly toasted bread and cool tomatoes.

Pro Tips

  • Choose ripe but firm cherry tomatoes because they provide the sweetest flavor while holding their shape after chopping and seasoning.
  • Soften the cream cheese completely before mixing because cold cream cheese can leave stubborn lumps and create an uneven baked texture.
  • Drain excess tomato juices before adding the topping so the warm cheese stays creamy instead of becoming watery during serving.
  • Prepare the tomatoes shortly before serving and keep them separate from the baked cheese until the last moment for the freshest flavor.

Storage Instructions

Store leftover Bruschetta Dip in an airtight container in the refrigerator for up to 3 days. For the best texture transfer any remaining fresh tomato topping into a separate container because the tomatoes release additional moisture during storage. Allow the baked cheese to cool slightly before refrigerating but place leftovers in the refrigerator within 2 hours of serving.

Keep the tomatoes cold and covered so their flavor stays fresh and their juices do not make the cheese base watery. To reheat the cheese portion transfer it to a small oven-safe dish and warm at 325 degrees Fahrenheit until thoroughly heated to 165 degrees Fahrenheit. Cover loosely if the surface begins to brown too much and stir gently if the cheese appears slightly separated.

Add the tomato mixture only after reheating. Store any leftover toasted baguette in a sealed container at room temperature for up to 2 days. Refresh the bread in a warm oven until crisp before serving. Freezing the assembled dip is not recommended because the cream cheese can become grainy and the tomatoes lose their fresh texture after thawing.
