Description

These easy Tomato Fritters turn juicy tomatoes into crisp golden patties with a tender center and fresh herb flavor. They are a quick and simple choice for brunch and weeknight dinner ideas plus they work beautifully for meal prep and potluck tables. The best part is the light texture with a healthy mix of tomatoes and herbs while Parmesan adds savory depth. Serve them warm with yogurt sauce or tuck them into wraps for a satisfying homemade meal.

Ingredients

  • 4 medium Ripe tomatoes
  • 1 teaspoon divided Fine salt
  • 2 Large eggs
  • 3/4 cup All purpose flour
  • 1/2 cup Finely grated Parmesan cheese
  • 1/4 cup chopped Fresh parsley
  • 2 tablespoons chopped Fresh basil
  • 2 thinly sliced Scallions
  • 1 clove finely grated Garlic
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 1/2 cup Plain Greek yogurt
  • 1 tablespoon Lemon juice

Instructions

  1. Cut the four tomatoes into irregular small pieces and scatter them loosely in a mixing bowl with half of the salt. The bright red pieces should vary slightly in size and release visible juice around the edges. After a brief rest drain away the excess liquid so the tomato pieces look less watery while remaining fresh and juicy. This change helps the later batter stay thick enough to form fritters.
  2. Add the two eggs and flour and Parmesan and parsley and basil and scallions and garlic and baking powder and pepper to the drained tomatoes. Fold everything together until the dry ingredients absorb the remaining tomato juice. The mixture should become thick and spoonable with red tomato chunks and green herbs distributed unevenly through the pale batter. Some tomato pieces should remain partly exposed instead of disappearing completely.
  3. Scoop the thick batter into eight uneven rounds inside the skillet. Leave natural gaps between the portions and allow a few tomato pieces to sit near the edges of each mound. The raw fritters should look soft and irregular rather than perfectly circular. The batter begins spreading slightly while the lower surfaces start setting against the hot oil.
  4. Cook the eight fritters until the lower edges turn deep golden and the tops lose some of their wet shine. Small bubbles and uneven cracks should appear around the visible tomato pieces. The fritters should shift slightly toward the center as they firm and the edges become crisp. Their upper surfaces remain soft while the bottoms develop enough structure for flipping.
  5. Turn all eight fritters so their golden undersides face upward and move them into new positions around the skillet. The newly exposed sides should show uneven browning with darker patches near a few tomato pieces. Continue cooking until the second sides become golden and the centers feel set. The finished fritters should remain irregular with crisp edges and tender interiors rather than looking uniformly shaped.
  6. Transfer two finished Tomato Fritters onto a white plate and overlap them slightly to reveal their irregular browned edges. Break one fritter open so the tender tomato filled interior is visible. Add a small spoonful of Greek yogurt mixed with lemon juice beside the fritters. Scatter a few chopped herb pieces unevenly over the serving while keeping the natural browned surfaces visible.

Notes

Pro Tips:

  • Choose firm ripe tomatoes because very soft tomatoes release more liquid and can create a batter that spreads too quickly.
  • Salt and drain the chopped tomatoes before mixing because this small step produces thicker batter and noticeably crisper edges.
  • Keep each fritter rustic and slightly uneven because thinner edges become crisp while thicker centers stay tender and juicy.
  • Reheat leftovers in a dry skillet or hot oven because microwave heating can soften the browned surfaces and make them damp.

Storage: Allow the cooked Tomato Fritters to cool completely before storing them. Warm fritters create trapped steam and that moisture can soften the crisp surfaces. Place the fritters in a single loose layer inside an airtight container and separate additional layers with parchment paper. Refrigerate them for up to three days. Reheat the fritters in a lightly warmed skillet or in a hot oven until the centers are warm and the edges become crisp again. Avoid covering them during reheating because trapped moisture can make them soft. Freeze the cooled fritters in a single layer until firm and then transfer them to a freezer container. Reheat them directly from frozen in the oven and serve within two months for the best texture.
