Description

These Stuffed Zucchini Boats are an easy and healthy answer for busy nights when you need quick dinner ideas that still feel satisfying. Tender zucchini halves hold a simple turkey and tomato filling under a layer of melted cheese. This is one of the best recipes for weeknight dinner and meal prep because every portion reheats well and needs only familiar ingredients. Serve them for a casual party or potluck with salad and warm bread.

Ingredients

  • 4 Medium zucchini
  • 1 tablespoon Olive oil
  • 1 pound Lean ground turkey
  • 1 small Yellow onion
  • 2 cloves Garlic
  • 1 cup Diced tomatoes
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1/3 cup Italian seasoned breadcrumbs
  • 1 cup Shredded mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley

Instructions

  1. Slice four zucchini lengthwise to create eight similar sized halves. Scoop the soft centers while leaving a sturdy border around the green skins. The zucchini changes from whole vegetables into eight shallow boats with uneven handmade cavities. Arrange the halves loosely so their hollow centers remain visible.
  2. Combine the ground turkey with chopped onion and garlic until the meat breaks into irregular crumbles. Cook until the turkey loses its pink color and the onion becomes soft. The mixture changes from raw separate ingredients into moist pale brown crumbles with translucent onion pieces folded throughout. Shift the turkey toward the center as it cooks so browned pieces mix with softer pieces.
  3. Fold the diced tomatoes and Italian seasoning and salt and pepper into the cooked turkey. Stir in the breadcrumbs until the loose juices become absorbed. The filling changes to a chunky red and brown mixture with visible tomato pieces and moist turkey crumbles. Spread it unevenly across the skillet so several thicker areas and small exposed patches remain.
  4. Spoon the thick turkey mixture into all eight hollow zucchini halves. Press the filling gently while allowing several rustic mounds to rise above the edges. The separate shells and filling become eight assembled boats with varied amounts of tomato and turkey visible. Rotate several halves and nestle them loosely together without creating perfect rows.
  5. Scatter the mozzarella and Parmesan across the eight filled zucchini boats while leaving small areas of filling exposed. Bake until the zucchini becomes tender and the cheese melts into irregular creamy patches. The boats change from raw assembled vegetables into softened structures with bubbling cheese and lightly browned edges. Shift the baking dish during cooking so the boats show varied golden areas rather than identical coloring.
  6. Transfer two baked zucchini halves to a white plate for one serving. Place one boat at a slight angle against the other so the soft zucchini edge and juicy filling remain visible. The finished portion gains fresh parsley and a close view of the browned cheese and chunky interior. Keep the cheese irregular and the filling slightly loose so the serving looks homemade.

Notes

Pro Tips:

  • Choose medium zucchini with straight sides because very large zucchini can become watery and develop tough seeds during baking.
  • Scoop each cavity to a similar depth while keeping the shells slightly irregular so all eight boats cook at a steady rate.
  • Drain very juicy tomatoes before adding them because a thick filling stays inside the zucchini and reheats more cleanly.
  • Broil the finished boats briefly when deeper browning is desired while watching closely so the cheese does not burn.

Storage: Allow leftover Stuffed Zucchini Boats to cool before transferring them to a covered container. Store them in the refrigerator for up to four days. Keep the boats in a single layer when possible so the cheese and filling remain attached. Place parchment between layers when stacking is necessary. Reheat the boats in a covered baking dish until the centers are hot. Uncover them near the end so the cheese can soften without trapping excess steam. Freezing is possible although the zucchini becomes softer after thawing. Freeze individual portions for up to two months then thaw them overnight before reheating.
