Description

This easy Spiderweb Taco Dip brings creamy beans and seasoned cheese together with crisp vegetables and a playful sour cream web. It is a quick and simple appetizer with the best festive look for a Halloween party and it also works for a potluck or weeknight dinner. Fresh tomatoes and lettuce add a healthy touch while olives and cheddar make every scoop rich and satisfying. Serve it chilled with tortilla chips for fun holiday ideas everyone can share.


Ingredients

  • 1 can or 16 ounces Refried beans
  • 2 tablespoons Taco seasoning
  • 8 ounces softened Cream cheese
  • 1 cup divided Sour cream
  • 1 cup Shredded cheddar cheese
  • 2 medium diced Roma tomatoes
  • 1 cup Shredded lettuce
  • 1 half cup sliced Black olives
  • 3 thinly sliced Green onions
  • 8 ounces for serving Tortilla chips


Instructions

  1. Stir the refried beans with the taco seasoning until the dark seasoning streaks disappear into the beans. The mixture should change from plain smooth beans into a thicker rust colored base with a few natural swirls and uneven ridges.
  2. Combine the softened cream cheese with three quarters cup of sour cream until the two ingredients become one pale and spreadable mixture. Small soft folds and a few uneven cream cheese streaks should remain so the texture looks homemade rather than perfectly whipped.
  3. Spread the seasoned beans across the bottom of a shallow round ceramic serving dish with an uneven edge and visible spoon ridges. Spoon the creamy cheese mixture over the beans and spread it loosely while leaving a few narrow bean colored edges visible around the dish.
  4. Scatter the shredded cheddar and diced tomatoes and shredded lettuce and sliced black olives and green onions over the creamy layer. Keep the toppings loosely spread with slight overlap and irregular patches so some pale cream remains visible for the spiderweb design.
  5. Pipe the remaining sour cream in loose rings across the topping and drag thin lines outward to form an imperfect spiderweb. Scoop one portion onto a white plate so the bean layer and creamy layer and colorful toppings remain visible with a few tortilla chips resting unevenly beside it.

Notes

Pro Tips:

  • Soften the cream cheese completely before mixing because cold pieces can create firm lumps and disturb the bean layer.
  • Drain and dry the tomatoes well so extra moisture does not pool over the cheese or blur the sour cream spiderweb.
  • Leave open patches between the toppings because a crowded surface can hide the web and make each layer harder to see.
  • Chill the assembled dip for thirty minutes before serving so the layers firm slightly and hold together on each chip.

Storage: Cover leftover Spiderweb Taco Dip tightly and refrigerate it within two hours of serving. Keep it in the original serving dish when possible so the layers do not shift during transfer. The dip keeps well for up to three days although the lettuce and tomatoes will soften as they release moisture. For the best texture enjoy it during the first day after assembly. Do not freeze the assembled dip because cream cheese and sour cream can separate after thawing and the fresh vegetables can become watery.
