Description

This easy Slow Cooker Lo Mein brings tender chicken and colorful vegetables together with savory noodles for quick family dinner ideas. The simple sauce cooks into the chicken while the vegetables stay pleasantly crisp and the noodles are folded in at the end. It is one of the best healthy comfort meals for a busy weeknight dinner and it also works for meal prep or a casual potluck. Every bowl tastes homemade and satisfying without feeling heavy.

Ingredients

  • 1 1/2 pounds Boneless skinless chicken breasts
  • 1/2 cup Low sodium soy sauce
  • 1/4 cup Hoisin sauce
  • 1/2 cup Chicken broth
  • 2 tablespoons Honey
  • 1 tablespoon Sesame oil
  • 1 tablespoon grated Fresh ginger
  • 3 cloves minced Garlic
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 medium thinly sliced Carrots
  • 1 medium thinly sliced Red bell pepper
  • 2 cups Broccoli florets
  • 8 ounces Dry lo mein noodles
  • 3 thinly sliced Green onions
  • 1 tablespoon Sesame seeds

Instructions

  1. The chicken changes from whole breasts into uneven bite size strips while the carrots and bell pepper become thin slices and the broccoli is divided into irregular florets. The pieces should vary slightly in size and should rest in loose groups so the preparation looks natural rather than perfectly arranged.
  2. The pale chicken strips become partly covered with a deep brown glossy mixture of soy sauce and hoisin sauce and broth and honey and sesame oil and ginger and garlic. Some chicken remains visible at the edges while the pieces overlap unevenly and shift toward the center as the sauce settles between them.
  3. The chicken changes from pale raw strips into fully cooked tan pieces with darker sauce stained edges while the liquid becomes slightly reduced and more opaque. The pieces soften and shift apart through the sauce with irregular spacing and a few overlapping strips near the center.
  4. The orange carrots and red bell pepper and green broccoli are scattered over the cooked chicken and begin to soften while keeping distinct color and shape. The vegetables become partially glazed and are folded through the chicken so some sit near the edges while others settle into the center.
  5. The loose cooking liquid becomes glossy and thicker after the cornstarch mixture is stirred in while the cooked noodles are folded through the chicken and vegetables. The noodles change from plain pale strands into brown coated tangles with vegetables and chicken caught unevenly between loose folds.
  6. A single portion is transferred from the slow cooker into a white bowl and the glossy noodles form loose uneven loops around tender chicken and vegetables. Three sliced green onions and 1 tablespoon sesame seeds are scattered casually over the top while natural overlaps and non uniform sauce color keep the serving homemade.

Notes

Pro Tips:

  • Add the vegetables only during the final thirty minutes so they become tender while keeping clear color and a slight bite.
  • Cook the noodles separately and fold them in at the end because long slow cooking can make their texture overly soft and sticky.
  • Use low sodium soy sauce first and adjust after mixing since hoisin sauce also contributes salt and concentrated sweetness.
  • Slice the chicken into similar but not identical strips so it cooks evenly while still giving the finished dish a natural homemade look.

Storage: Cool leftover Slow Cooker Lo Mein before transferring it into a shallow airtight container and refrigerate it within two hours so the chicken and vegetables stay safe. Store the noodles for up to three days and keep extra green onions separate when possible because fresh garnish loses its crisp texture during refrigeration. Reheat a portion gently with a small splash of broth or water and stir halfway through so the sauce loosens and the noodles warm without drying. Freezing is possible for up to one month although the noodles and vegetables will become softer after thawing and reheating.
