Description

This easy pumpkin spice syrup is a quick and simple way to bring the best fall flavor to coffee and tea and pancakes and oatmeal. It uses real pumpkin with warm spices for a healthy homemade option that tastes rich without being heavy. Ingredients

  • 1 cup Water
  • 1 cup packed Dark brown sugar
  • 1/2 cup Granulated sugar
  • 1/3 cup Pumpkin puree
  • 1 1/2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Ground nutmeg
  • 1/8 teaspoon Ground cloves
  • 1/8 teaspoon Fine sea salt
  • 1 teaspoon Vanilla extract


Instructions

  1. Add the water and dark brown sugar and granulated sugar and pumpkin puree together. Stir until the pumpkin loosens and the sugars begin dissolving into a cloudy orange mixture. The mixture should look uneven at first with darker sugar streaks moving through the pumpkin. Continue mixing until no dry sugar pockets remain and the liquid becomes more evenly colored.
  2. Add the cinnamon and ginger and nutmeg and cloves and salt to the orange syrup base. Stir until the spices spread through the liquid and create darker speckles and swirls. The mixture will deepen slightly in color as the spices hydrate. Scrape through any spice clusters so the surface shows scattered flecks instead of dry patches.
  3. Bring the mixture to a gentle simmer and let it cook until the sugar is fully dissolved and the pumpkin softens into the liquid. Stir occasionally as small bubbles rise and the syrup becomes darker and glossier. The finished texture should lightly coat the surface after stirring while remaining easy to pour. The color will change from cloudy orange to a deeper amber orange with fine spice flecks.
  4. Remove the syrup from the heat and stir in the vanilla extract. The vanilla disappears into the hot syrup while the surface settles from bubbling to a smooth glossy finish. Let the syrup cool until it thickens slightly more and the spice flecks remain suspended. The final syrup should flow in a steady ribbon instead of splashing like water.
  5. Pour one serving of the cooled syrup over a stack of three warm pancakes. Let the syrup run naturally across the top and down one side in uneven ribbons. Serve the pancakes while the syrup remains glossy and visible. The finished plate should show irregular pancake edges and nonuniform golden color with the amber syrup collecting in a small pool.
