Ingredients

  • 1/3 cup finely chopped Pepperoni
  • 1/2 cup Pizza sauce
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper
  • 3/4 cup Shredded mozzarella cheese
  • 2 tablespoons Grated Parmesan cheese
  • 1 tablespoon thinly sliced Fresh basil


Instructions

  1. Twist the stems from all 12 mushrooms and finely chop them into irregular pieces. The caps should now have visible hollow centers while remaining intact around the edges. Arrange the hollow caps loosely with natural spacing. Keep the chopped stems in a separate uneven pile so the change from whole mushrooms to prepared caps is obvious.
  2. Combine the chopped stems with the onion and pepperoni and olive oil. Cook until the mushrooms shrink and darken while the onion turns translucent and the pepperoni releases a little fat. The mixture should look softer and more compact than before. Some pieces will sit near the edges while others gather toward the center with uneven browning.
