Description

This Peach Quinoa Bowl is an easy and quick meal packed with sweet peaches and fluffy quinoa and crisp greens and golden chickpeas. It is a simple way to make the best healthy bowl for weeknight dinner and meal prep and brunch ideas. The honey lemon dressing keeps everything fresh while feta adds creamy flavor. Ingredients

  • 1 cup dry Quinoa
  • 2 cups Water
  • 2 medium Ripe peaches
  • 1 can 15 ounces drained and rinsed Canned chickpeas
  • 4 cups loosely packed Baby spinach
  • 1 cup chopped English cucumber
  • 1/2 cup Crumbled feta cheese
  • 3 tablespoons divided Olive oil
  • 1 tablespoon Honey
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon divided Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup torn Fresh basil


Instructions

  1. The dry quinoa changes from tiny firm grains into a tender base as it absorbs the water in the saucepan. The grains look slightly translucent and unevenly puffed while a few pieces cling near the edges.
  2. The chickpeas shift from pale and soft to lightly crisp with golden spots across their skins. They spread out in an uneven layer with a few darker edges and small cracks that show roasting.
  3. The honey and lemon juice and mustard blend into a glossy dressing that looks smooth and pale gold. Small streaks of olive oil disappear as the mixture turns slightly thick and shiny.
  4. The quinoa changes from plain grains into a colorful mixed bowl as spinach softens against the warm quinoa. Peach slices and cucumber pieces sit partly folded through the grains while feta crumbles remain visible in uneven pockets.
