Description

This Peach Chicken Salad is an easy and quick lunch packed with tender chicken and juicy peaches and crisp greens. It is one of the best healthy ideas for a simple weeknight dinner and meal prep and brunch or party spread. The creamy tangy dressing keeps every bite fresh while pecans add crunch and the fruit brings summer sweetness. Make it ahead for busy days or serve it right away when you need something bright and filling.


Ingredients

  • 2 medium breasts Boneless skinless chicken breasts
  • 2 large peaches Ripe peaches
  • 6 cups Mixed greens
  • 2 ribs finely sliced Celery
  • 1/4 cup thinly sliced Red onion
  • 1/2 cup chopped Pecans
  • 1/3 cup Plain Greek yogurt
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Honey
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 3/4 teaspoon divided Kosher salt
  • 1/2 teaspoon divided Black pepper
  • 2 tablespoons torn Fresh basil


Instructions

  1. The 2 chicken breasts go from pale and raw to lightly golden on the outside as they cook with olive oil and seasoning. The edges turn unevenly browned and the surface develops small darker spots while the centers stay plump and moist.
  2. The cooked chicken changes from whole breasts into warm uneven slices and the peaches change from whole fruit into juicy wedges. The salad begins to look fresh and colorful as the soft peach pieces sit beside the browned chicken slices with natural uneven edges.
  3. The yogurt and mayonnaise and mustard and honey and lemon juice turn into a pale creamy dressing with tiny mustard specks. The dressing changes from separate spoonfuls into one smooth mixture that will cling lightly to the chicken and greens.
  4. The sliced chicken moves into the bowl and becomes lightly coated with the creamy dressing. Some browned edges remain visible while other pieces catch thicker streaks which makes the salad look homemade and gently mixed.
