Description

This easy Patty Pan Squash Spice Cake turns fresh summer squash into a tender dessert filled with cinnamon and nutmeg plus brown sugar and maple flavor. It is a quick and simple choice for healthy dessert ideas when you want the best homemade cake for brunch or a holiday potluck or a cozy party. The grated squash keeps every slice moist while the maple cream cheese frosting adds a rich finish that makes this cake ideal for meal prep treats and family celebrations.

Ingredients

  • 1 1/2 cups finely grated and lightly squeezed Patty pan squash
  • 1 3/4 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 1/2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground ginger
  • 1/2 teaspoon Fine salt
  • 2 Large eggs
  • 3/4 cup packed Light brown sugar
  • 1/4 cup Granulated sugar
  • 1/2 cup Neutral vegetable oil
  • 1/3 cup Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1/2 cup Chopped pecans
  • 4 ounces softened Cream cheese
  • 2 tablespoons softened Unsalted butter
  • 3/4 cup Powdered sugar
  • 1 tablespoon Pure maple syrup

Instructions

  1. Finely grate enough patty pan squash to measure 1 1/2 cups. Gently squeeze the grated squash so excess liquid drains away while the strands remain moist rather than dry. The squash should change from firm whole pieces into a loose mound of pale green and yellow shreds with irregular lengths. Keep the strands naturally tangled and slightly clumped.
  2. Combine the flour with baking powder and baking soda plus cinnamon and nutmeg and ginger and salt. Mix until the spices form warm brown streaks throughout the pale flour. The separate powders should become one softly tinted mixture with tiny darker spice flecks. Leave a few natural ridges and uneven patches across the mixture.
  3. Mix the 2 eggs with brown sugar and granulated sugar plus vegetable oil and Greek yogurt and vanilla until the mixture becomes glossy and caramel colored. Fold in exactly 1 1/2 cups of grated squash so the strands spread through the wet mixture. The loose ingredients should become a thick shiny base with visible pale squash threads. The mixture will look uneven and softly rippled rather than perfectly smooth.
  4. Add the spiced flour mixture to the squash mixture and fold until no large dry pockets remain. Scatter in 1/2 cup chopped pecans and fold them through the thick batter. The glossy wet mixture should transform into a dense tan batter with spice flecks and visible squash strands plus irregular pecan pieces. A few small flour streaks can remain before the final fold.
  5. Transfer the thick batter into a prepared 9 inch round cake pan. Spread it outward so the batter reaches the edges while keeping the top naturally rippled and slightly uneven. The batter should change from a folded mound in the bowl into a broad round layer. Leave subtle swirls and scattered pecan pieces visible across the surface.
  6. Bake the cake until the center rises and the edges turn deeper golden brown. The surface should become dry and gently domed with several natural cracks and darker toasted areas. Allow the cake to cool completely so the crumb settles and the top firms enough for frosting. The baked cake should retain a homemade shape with uneven browning and a slightly irregular edge.
  7. Blend the cream cheese with butter and powdered sugar plus maple syrup until thick and creamy. Spread the frosting over the cooled cake in loose swirls and scatter a few pecan pieces unevenly over the top. Cut one slice and transfer it to a white plate so the moist interior and squash strands remain visible. The slice should have an irregular frosting edge and naturally scattered crumbs.

Notes

Pro Tips:

  • Choose small tender patty pan squash because the skin is softer and the grated strands blend more smoothly into the cake.
  • Lightly squeeze the grated squash rather than wringing it dry so enough natural moisture remains for a tender crumb.
  • Fold the flour mixture only until combined because excessive mixing develops gluten and can make the cake dense.
  • Let the cake cool completely before adding frosting so the cream cheese layer keeps its thick swirled texture.

Storage: Store the unfrosted cake in a tightly covered container at room temperature for up to two days. Keep it away from direct heat so the moist crumb does not become sticky or overly soft. Once the maple cream cheese frosting is added the cake should be refrigerated. Place slices in a covered container and keep them chilled for up to four days so the dairy frosting remains safe and fresh. For the best texture let a refrigerated slice rest at room temperature for about fifteen minutes before serving. This softens the frosting and allows the cinnamon and maple flavors to become more noticeable. The unfrosted cake can be frozen for up to two months. Wrap the cooled cake tightly and thaw it overnight in the refrigerator before adding freshly mixed frosting.
