  • 8 ounces cut into 16 cubes Low moisture mozzarella
  • 6 cups Water
  • 1/3 cup Baking soda
  • 1 beaten Large egg
  • 1 tablespoon Coarse pretzel salt
  • 1 cup Marinara sauce


Instructions

  1. Stir the warm water with the yeast and sugar until the surface looks lightly foamy. Add the flour and fine salt and melted butter then combine everything until a rough dough forms. Knead until the dough changes from shaggy and flour streaked to smooth and elastic. It should still look handmade with a few soft folds across the surface.
  2. Leave the dough until it expands to about twice its original size. The surface will look rounded and airy with a few natural bubbles beneath the skin. Press the dough gently so it collapses into a softer flatter mass. This visible change removes excess air and makes the dough easier to divide.
  3. Divide the dough into exactly 16 irregular pieces and flatten each piece into a small round. Place one mozzarella cube in the center of every piece then fold the dough around the cheese. Pinch the seams closed and roll each piece loosely into a ball. The 16 stuffed bites should vary slightly in size and shape while every cheese cube stays enclosed.
