Description

Mini Corn Dog Muffins are an easy and quick way to turn classic fair food into simple bite sized ideas for busy families. They combine tender cornmeal batter with savory hot dog centers for the best handheld snack that feels fun while still fitting a balanced and healthy menu. Ingredients

  • 1 cup All purpose flour
  • 1 cup Yellow cornmeal
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 1 teaspoon Fine salt
  • 1 Large egg
  • 1 cup Whole milk
  • 4 tablespoons melted Unsalted butter
  • 2 tablespoons Honey
  • 6 standard hot dogs Beef hot dogs
  • As needed Nonstick cooking spray
  • 1 quarter cup Ketchup
  • 1 quarter cup Yellow mustard


Instructions

  1. Cut the 6 hot dogs into exactly 24 thick pieces and keep the pieces slightly irregular so the finished muffins look homemade. The whole hot dogs become short round sections with exposed centers and uneven edges and the pieces are loosely gathered rather than lined up.
  2. Combine the flour and cornmeal and sugar and baking powder and salt with the egg and milk and melted butter and honey until no dry pockets remain. The separate ingredients change into a thick pale yellow batter with visible cornmeal texture and a few small lumps and uneven swirls.
  3. Divide the batter unevenly among exactly 24 coated mini muffin cups and fill each cup about two thirds full. Press one hot dog piece into each cup so the batter rises around the sides while part of every hot dog remains visible at the center.
  4. Bake the filled cups until the batter rises around the hot dog pieces and the tops become lightly golden with darker edges. The wet batter changes into structured muffins with softly rounded tops and a few cracks and uneven browning while the hot dog centers look hot and slightly glossy.
  5. Transfer one baked muffin to a white plate and cut it in half so the tender yellow crumb and juicy hot dog center are visible. Place a small spoonful of ketchup and mustard beside the halves and keep the pieces casually angled with loose crumbs and uneven browned edges.
