Description

This Meatloaf with Brown Sugar Glaze Dinner is an easy and quick comfort meal with simple pantry ingredients and the best sweet tangy topping. It is a healthy style dinner idea when served with vegetables and it works beautifully for weeknight dinner and meal prep and holiday tables and potluck nights. Ingredients

  • 1 1/2 pounds Ground beef
  • 3/4 cup Plain breadcrumbs
  • 1/2 cup Whole milk
  • 1 Large egg
  • 1/2 cup finely diced Yellow onion
  • 2 cloves minced Garlic
  • 1/2 cup divided Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/3 cup packed Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon chopped Fresh parsley


Instructions

  1. Breadcrumbs turn pale and damp as milk soaks into them and the texture changes from dry crumbs to a soft uneven mash. The mixture should look loose and lumpy rather than smooth because those little soft pockets help keep the meatloaf tender.
  2. Ground beef folds into the softened breadcrumbs with egg and onion and garlic and seasonings until the mixture changes into a rough sticky blend. Small onion pieces and darker seasoning streaks should still show because homemade meatloaf should never look perfectly uniform.
  3. The soft beef mixture is moved into the baking dish and shaped into a thick loaf with rounded sides and an uneven top. The structure changes from loose mixture to a formed loaf and small cracks and rough edges should remain visible.
  4. Ketchup and brown sugar and mustard and vinegar turn into a glossy glaze that spreads over the loaf in thick red brown streaks. The glaze should sit heavier in the cracks and thin out around the sides so the top looks naturally coated rather than perfectly painted.
