Description

These Funfetti Snack Cake Bites are an easy and quick dessert made with soft vanilla cake and cheerful rainbow sprinkles. Instructions

  1. Beat the softened butter with the granulated sugar until the mixture changes from separate yellow butter and white sugar into a pale fluffy mass. The surface should look airy and slightly uneven with soft ridges rather than perfectly smooth.
  2. Blend the eggs and vanilla into the fluffy butter mixture until glossy streaks disappear. Fold in the flour mixture and milk until the batter becomes thick and pale. Stop when a few natural folds remain because overmixing can make the baked bites firm.
  3. Scatter the rainbow jimmies across the batter and fold them through with broad gentle movements. The plain batter should change into a colorful mixture with uneven streaks and scattered bright flecks. Keep the sprinkles partly visible instead of crushing them into the batter.
