Description

French Onion Chicken Soup is an easy and cozy dinner with tender chicken and deeply caramelized onions in a rich savory broth then finished with cheesy toasted bread while it gives you quick comfort food ideas with simple ingredients and the best balance of sweet onion flavor and hearty protein and it also works for a healthy weeknight dinner or meal prep and feels special enough for a holiday or potluck or brunch or party when served in warm bowls at the table.

Ingredients

  • 2 Large yellow onions
  • 2 Boneless skinless chicken breasts
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 Garlic cloves
  • 2 tablespoons All-purpose flour
  • 4 cups Low sodium beef broth
  • 2 cups Low sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Fresh thyme leaves
  • 1 Bay leaf
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 8 slices Baguette slices
  • 1 1/2 cups shredded Gruyere cheese

Instructions

  1. Slice exactly 2 yellow onions into thin irregular half moons so some pieces are slightly wider than others and the layers naturally separate.

The onions should change from firm whole bulbs into loose curved strands with uneven lengths and casual overlapping edges.

  2. Transfer the sliced onions into the large pot with 2 tablespoons butter and 1 tablespoon olive oil then cook until the onion strands collapse and shrink into a deep golden tangle.

The onions should look glossy and soft with darker browned edges while their volume becomes noticeably smaller and their placement shifts repeatedly through cooking.

  3. Push the caramelized onions unevenly toward the edges then place exactly 2 whole chicken breasts into the open center and season them with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.

Cook until the chicken changes from pink and glossy to mostly opaque with scattered pale golden patches while the onions become slightly darker around the meat.

  4. Add 3 minced garlic cloves and 2 tablespoons flour plus most of the 1 tablespoon thyme leaves then stir them through the onions before pouring in 4 cups beef broth and 2 cups chicken broth with 1 tablespoon Worcestershire sauce and 1 bay leaf.

Simmer until the liquid changes into a rich brown broth with a lightly thickened body while exactly 2 chicken breasts become fully opaque and tender among floating caramelized onion strands.

  5. Remove the bay leaf then transform the 2 cooked chicken breasts into irregular tender shreds and return every piece to the pot so the chicken spreads naturally throughout the broth.

The soup should now look fuller and more textured as pale shredded chicken mixes unevenly with dark golden onions and rich brown broth instead of remaining as two whole pieces.

  6. Arrange exactly 8 baguette slices loosely across a sheet pan then scatter all 1 1/2 cups shredded Gruyere unevenly over the bread so some edges remain exposed.

Cook until the bread changes from pale and soft to crisp and golden while the Gruyere becomes melted and bubbly with irregular toasted brown patches.

  7. Ladle one serving of the finished soup into a deep white bowl so shredded chicken and caramelized onions remain visible through the rich broth then place 2 of the 8 Gruyere baguette slices loosely across the top.

Finish with a small amount of the reserved thyme leaves so the bowl has natural contrast while the melted cheese shows uneven browning and the chicken and onions remain casually distributed.

Notes

Pro Tips:

  • Slice the onions thinly but not perfectly so they caramelize at slightly different rates and create a more homemade texture.
  • Cook the onions patiently until deep golden because rushing this stage leaves the broth sharp instead of naturally sweet and rich.
  • Use low sodium broths so you can control the final seasoning after the onions and Worcestershire add their own savory depth.
  • Toast the baguette until crisp before adding Gruyere so the bread keeps some structure after it touches the hot soup.

Storage: Cool the French Onion Chicken Soup completely before transferring it into airtight containers and keep the cheesy baguette slices separate so they do not become soggy.

Refrigerate the soup for up to three days and store any unused toasted bread separately in a sealed container while keeping extra cheese chilled.

Freeze the soup without bread or cheese for up to three months and leave enough space in the freezer container for the liquid to expand safely.

Thaw frozen soup overnight in the refrigerator then reheat until steaming and prepare fresh Gruyere toast before serving for the best texture.
