Description

This easy Fig Walnut Flatbread brings sweet figs and toasted walnuts together with creamy ricotta and tangy goat cheese on a crisp base. Ingredients

  • 2 medium Naan flatbreads
  • 3/4 cup Whole milk ricotta
  • 4 ounces Goat cheese
  • 6 medium Fresh figs
  • 1/2 cup Walnuts
  • 1 tablespoon Olive oil
  • 2 tablespoons Honey
  • 1 cup loosely packed Baby arugula
  • 1 teaspoon Fresh thyme leaves
  • 1/4 teaspoon Fine sea salt
  • 1/8 teaspoon Black pepper


Instructions

  1. Cut all 6 figs into irregular thin wedges so the ruby centers become visible and the pieces vary slightly in width. Roughly chop the 1/2 cup walnuts into uneven pieces while leaving a few larger fragments for a more natural crunchy texture.
  2. Stir the 3/4 cup ricotta with the 4 ounces goat cheese and the salt and pepper until partially blended with visible soft goat cheese streaks. Spread the mixture unevenly over both naan flatbreads while leaving narrow irregular borders and brush the exposed edges with the olive oil.
  3. Arrange all sliced fig wedges across the two cheese covered flatbreads with loose spacing and slight overlap while keeping the pieces irregularly placed. Scatter all chopped walnuts between the figs and add the thyme so the toppings remain visible instead of forming a solid layer.
  4. Bake the topped flatbreads until the naan edges become crisp and golden while the fig edges soften and darken slightly. The ricotta should look warm and set while the goat cheese remains in uneven creamy pockets and the walnuts turn lightly toasted.
