Description

This easy Fig Prosciutto Sandwich brings sweet figs and savory prosciutto together with creamy goat cheese and peppery arugula on crisp ciabatta. Ingredients

  • 4 medium rolls Ciabatta rolls
  • 8 medium figs Fresh figs
  • 8 thin slices Prosciutto
  • 6 ounces Goat cheese
  • 2 packed cups Baby arugula
  • 4 teaspoons Balsamic glaze
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Freshly ground black pepper


Instructions

  1. Split all four ciabatta rolls through the center while keeping the top and bottom halves paired. Cut all eight figs into irregular slices so their purple skins and seeded pink centers remain visible. Spread the bread halves loosely across the board and shift the fig slices into several casual overlapping groups. Keep the pieces natural rather than identical.
  2. Brush the eight cut bread surfaces with olive oil and place them cut side down in a cast iron skillet. Toast until scattered golden patches develop and the edges become lightly crisp. Rotate the bread halves during toasting so several pieces show deeper browning than others. Transfer them back to the board with the toasted surfaces facing upward.
  3. Spread the softened goat cheese across all eight toasted bread surfaces while leaving some golden edges exposed. Make the cheese layer slightly thicker on the four bottom halves. Arrange the slices from all eight figs over the four bottom halves with slight overlap and uneven spacing. Press only a few slices into the cheese so the seeded centers stay visible.
  4. Fold two prosciutto slices loosely over the figs on each sandwich bottom so the meat creates soft uneven ribbons. Scatter one half cup of arugula over each portion while allowing several leaves to extend past the bread. Drizzle one teaspoon of balsamic glaze across each filling and finish with black pepper. Place the top halves at slight angles before pressing the sandwiches gently together.
  5. Move one finished sandwich onto a white plate and cut it diagonally into two unequal halves. Turn the cut sides outward so the creamy cheese and purple figs and folded prosciutto and arugula layers remain visible.
