Description

These easy Fig Muffins bring tender fruit and warm cinnamon into a quick breakfast that feels homemade and comforting. Ingredients

  • 2 cups All purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Fine salt
  • 1/2 cup melted Unsalted butter
  • 3/4 cup packed Light brown sugar
  • 2 Large eggs
  • 3/4 cup Plain Greek yogurt
  • 1/4 cup Whole milk
  • 2 teaspoons Vanilla extract
  • 8 medium figs Fresh figs
  • 2 tablespoons Coarse sugar


Instructions

  1. Cut the eight fresh figs into irregular bite sized pieces so their soft pink centers and purple skins remain visible. Keep the pieces uneven and allow a few smaller bits to release juice since this creates natural jammy streaks in the batter.
  2. Mix the flour with the baking powder and cinnamon and salt until the pale mixture shows fine brown cinnamon speckles throughout. The dry ingredients should look loose and evenly blended with a few natural ridges left across the surface.
  3. Combine the melted butter with the brown sugar and two eggs and Greek yogurt and milk and vanilla until the mixture becomes glossy and tan. Small streaks of yogurt can remain around the edges since the mixture should look homemade rather than perfectly smooth.
  4. Add the dry mixture to the wet mixture and fold until a thick pale brown batter forms with a few flour streaks still visible. Scatter the chopped figs through the batter and fold gently so purple skins and pink fruit pieces remain unevenly suspended throughout.
