Description

This easy Fig Goat Cheese Salad brings sweet figs and creamy goat cheese together with crisp greens and toasted walnuts plus a quick balsamic dressing for a simple meal that feels special. Ingredients

  • 6 packed cups Mixed salad greens
  • 8 medium figs Fresh figs
  • 4 ounces Goat cheese
  • 1/2 cup Raw walnuts

  • 2 tablespoons Balsamic vinegar
  • 2 teaspoons Honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Fine sea salt

Instructions

  1. Rinse and dry the 8 figs before cutting each one into uneven quarters so the juicy pink centers become visible and the pieces remain slightly irregular. Slice the quarter onion into very thin curved strips and separate several layers so the pieces can scatter naturally through the salad.
  2. Combine the olive oil with balsamic vinegar and honey and Dijon mustard plus salt and black pepper until the separate liquids become one glossy brown dressing. The finished dressing should look lightly thickened with tiny pepper flecks and faint uneven streaks that show its homemade texture.
