Description

These Crockpot Chicken Tacos are an easy and healthy choice for busy families because tender chicken cooks slowly with tomatoes and warm spices until juicy and flavorful. The quick preparation makes them one of the best dinner ideas for a hectic weeknight dinner while the simple shredded filling also works beautifully for meal prep or a casual party. Serve the tacos with fresh toppings for a colorful meal everyone can customize and enjoy.

Ingredients

  • 2 large breasts totaling about 1 1/2 pounds Boneless skinless chicken breasts
  • 1 can or 10 ounces Diced tomatoes with green chiles
  • 1 small onion finely diced Yellow onion
  • 3 cloves minced Garlic
  • 1/2 cup Chicken broth
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Dried oregano
  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh lime juice
  • 8 tortillas Small flour tortillas
  • 1 cup Shredded lettuce
  • 1 medium avocado Diced avocado
  • 1/2 cup Crumbled queso fresco
  • 1/4 cup roughly chopped Fresh cilantro
  • 4 wedges Lime wedges

Instructions

  1. Place exactly 2 chicken breasts in a single uneven layer before scattering the diced onion and minced garlic around the edges. Pour the tomatoes and broth over the chicken before sprinkling the spices across the exposed surfaces so the pale meat becomes streaked with red and brown seasoning.
  2. Cook the layered chicken until both breasts change from pale pink to opaque golden beige while the onion softens and the tomato liquid darkens. The chicken should remain whole at this stage although the edges begin separating into loose fibers and the sauce looks gently reduced around the meat.
  3. Pull both cooked chicken breasts into irregular strands and chunks before spreading them through the softened tomatoes and onion. Fold the chicken through the sauce until most strands are coated while a few lighter pieces remain visible and the mixture becomes thicker and more textured.
  4. Pour the lime juice over the thick shredded chicken before folding the mixture again so the strands appear glossy and evenly moist. The finished filling should hold together without excess liquid while tomato pieces and darker spice flecks remain visible between uneven chicken strands.
  5. Divide the cooked chicken filling among exactly 8 soft tortillas before folding each tortilla loosely around the irregular shredded meat. Finish with uneven layers of lettuce and avocado and queso fresco and cilantro before serving one portion of 2 tacos with a lime wedge.

Notes

Pro Tips:

  • Use similarly sized chicken breasts so both pieces become tender at the same time without one drying out before the other cooks.
  • Avoid adding too much broth because the tomatoes release liquid and the finished taco filling should remain thick rather than soupy.
  • Warm the tortillas just before assembly so they fold around the chicken easily without cracking or becoming stiff at the edges.
  • Store the fresh toppings separately from the chicken filling so every reheated taco keeps a crisp and creamy contrast.

Storage: Allow the chicken filling to cool before transferring it into a sealed container. Refrigerate the filling separately from the tortillas and fresh toppings so the textures remain distinct. The cooked chicken keeps well in the refrigerator for up to four days. Store the lettuce and avocado and cheese in separate containers because moisture from the filling can soften them. Reheat the chicken in a covered saucepan over gentle heat or in short microwave intervals until steaming hot. Add a small spoonful of broth only when the filling appears dry. Freeze the cooled chicken filling for up to three months in a freezer safe container. Thaw it overnight in the refrigerator before reheating and assembling fresh tacos.
