Description

Crispy Pickle Poppers are an easy snack with tangy dill pickles plus creamy cheese and a crunchy golden coating. These quick bites use simple ingredients and give you one of the best party ideas when you want bold flavor without much work. They are a fun healthy-ish option for weeknight dinner sides or meal prep snacks and they also fit holiday tables or potluck spreads or brunch boards or game day party trays with plenty of crunch. Serve warm with ranch dip.


Ingredients

  • 6 large Whole dill pickles
  • 4 ounces Cream cheese
  • 1/2 cup shredded Sharp cheddar cheese
  • 4 strips crumbled Cooked bacon
  • 2 tablespoons sliced Green onion
  • 1/2 teaspoon Garlic powder
  • 1/2 cup All purpose flour
  • 2 Large eggs
  • 1 cup Panko breadcrumbs
  • 1/2 teaspoon Paprika
  • 1/2 cup Ranch dressing


Instructions

  1. Slice the 6 large dill pickles lengthwise so you have exactly 12 pickle halves and then remove a small amount from each center to create shallow boats. Pat the hollowed surfaces dry so the centers look less glossy while the edges stay juicy and slightly irregular.
  2. Combine the 4 ounces softened cream cheese with the 1 half cup shredded cheddar and 4 crumbled bacon strips plus 2 tablespoons sliced green onion and 1 half teaspoon garlic powder. The mixture should change from separate ingredients into a thick speckled filling with visible cheddar strands and bacon pieces and green onion folded unevenly throughout.
  3. Divide the creamy bacon cheddar mixture among all 12 hollowed pickle halves so each center holds a visible mound of filling. Keep the filling slightly uneven with some cheddar strands and bacon pieces showing while the green pickle edges remain uncovered around every boat.
  4. Cover each of the 12 filled pickle boats with a light layer of flour and then egg before pressing the outside into panko mixed with the paprika. Arrange all 12 coated boats loosely across the baking tray so the pale crumb coating looks rough and uneven with small patches of green pickle still visible.
  5. Bake the 12 coated pickle boats until the breadcrumb coating changes from pale beige to golden brown and the cheese filling looks warm and slightly melted at the edges. Rotate and shift the boats once during baking so different sides brown naturally and some crumbs become darker than others without creating identical pieces.
  6. Transfer one finished popper to a white plate and cut it open so the tangy green pickle and creamy bacon cheddar interior are clearly visible beneath the crunchy coating. Add a small amount of ranch beside the popper and leave the cut halves casually offset so the browned crumbs and soft filling look homemade and naturally uneven.
