Description

These Crispy Parmesan Potato Bites are an easy and healthy oven baked snack with golden edges and soft fluffy centers. The quick preparation uses baby potatoes with Parmesan and simple seasonings for the best savory flavor. Ingredients

  • 1 1/2 pounds Baby potatoes
  • 2 tablespoons Olive oil
  • 3/4 cup Finely grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried Italian seasoning
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon Fine sea salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons chopped Fresh parsley


Instructions

  1. Wash and dry the 1 1/2 pounds of baby potatoes before cutting every potato into two uneven halves. Keep the pieces close in size so the centers soften at a similar rate. The whole potatoes now become irregular cut pieces with pale moist interiors exposed beside their thin skins.
  2. Transfer all potato halves into a mixing bowl then pour over the olive oil and scatter in the garlic powder and Italian seasoning and smoked paprika and salt and pepper. Toss until the skins and cut sides look lightly glossy and speckled. The dry potato pieces now appear coated with a thin seasoned layer while some spices gather more heavily on a few irregular edges.
  3. Scatter the finely grated Parmesan across a sheet pan in a loose uneven layer then place every seasoned potato half cut side down over the cheese. Press gently so the moist surfaces pick up a thick coating. The glossy potato halves now sit across the pan with Parmesan packed beneath them and loose cheese visible through irregular gaps.
  4. Roast the potatoes until their skins wrinkle slightly and the Parmesan underneath melts into connected golden patches. The centers should become tender while the exposed edges deepen from pale yellow to toasted brown. The separate cheese shreds now form a crisp uneven crust with bubbling edges and darker fragments around several potato halves.
  5. Turn the roasted potato halves so the crisp Parmesan sides face upward then shift the pieces into a looser arrangement. Return them briefly to the oven until soft cheese patches become dry and crisp. The hidden undersides now reveal rough golden crusts with uneven toasted ridges while the potato skins look lightly browned and tender.
  6. Transfer one serving of potato bites to a white plate with the crisp sides angled upward and the pieces casually overlapping. Scatter chopped parsley across the potatoes while leaving the browned crust visible. The finished portion shows fluffy interiors and wrinkled skins and nonuniform golden cheese with a few darker crisp fragments.
