Description

Creamy Thai Dumpling Soup is an easy and quick dinner packed with tender dumplings and coconut milk and red curry flavor. This simple bowl is one of the best cozy ideas for a weeknight dinner or meal prep because it comes together fast and still feels healthy and satisfying. Fresh ginger and garlic and lime brighten the creamy broth while spinach adds color. Serve it for a casual party or potluck when you want comforting flavor with minimal effort.

Ingredients

  • 1 tablespoon Avocado oil
  • 8 ounces Shiitake mushrooms
  • 3 cloves Garlic
  • 1 tablespoon grated Fresh ginger
  • 2 tablespoons Thai red curry paste
  • 4 cups Low-sodium chicken broth
  • 13.5 ounces Full-fat coconut milk
  • 1 tablespoon Soy sauce
  • 1 teaspoon Brown sugar
  • 16 dumplings Frozen dumplings
  • 3 cups Baby spinach
  • 1 tablespoon Fresh lime juice
  • 2 scallions Scallions
  • 1/4 cup leaves Fresh cilantro

Instructions

  1. Slice the 8 ounces of shiitake mushrooms into irregular strips and slice the 2 scallions while keeping the white portions separate from the green portions. The mushrooms should vary slightly in width so the finished soup keeps a natural homemade appearance.

The vegetables now change from whole pieces into smaller shapes that will soften quickly and distribute throughout the soup. Keep the scallion greens aside because they will be added only after the soup is served.

  2. Cook the sliced mushrooms with the scallion whites and 3 minced garlic cloves and 1 tablespoon grated ginger in the avocado oil until the mushrooms soften and develop lightly browned edges. Stir the mixture so some slices turn while others shift toward the center.

The mushrooms become darker and softer while the garlic and ginger cling to their surfaces. This creates the savory aromatic base that will carry flavor through the creamy broth.

  3. Add 2 tablespoons Thai red curry paste to the softened mushroom mixture and stir until the paste loosens and coats the mushrooms in uneven orange-red streaks. Some darker mushroom surfaces should remain visible through the curry coating.

The mixture changes from brown and pale aromatics into a richer red-orange base. Continue stirring just until the paste looks glossy and evenly distributed without completely hiding the mushroom texture.

  4. Pour in 4 cups chicken broth and 13.5 ounces coconut milk and add 1 tablespoon soy sauce with 1 teaspoon brown sugar. Stir until the curry paste disperses through the liquids and transforms them into a creamy orange broth.

Allow the broth to simmer until the coconut milk is fully incorporated and small bubbles appear around the mushrooms. The broth should look silky with subtle orange-red streaks and mushrooms redistributed throughout the pot.

  5. Add exactly 16 frozen dumplings to the simmering coconut curry broth and spread them around the pot so they have enough room to cook. As they simmer they will soften and become plumper while some naturally rotate and shift between the mushrooms.

The dumplings should look tender and slightly translucent around their folded edges when cooked through. The broth will become slightly thicker while the dumplings remain distinct rather than breaking apart.

  6. Fold 3 cups baby spinach into the soup and let the leaves soften into the hot broth while staying visibly green. Add 1 tablespoon fresh lime juice and gently mix so the dumplings shift positions without tearing.

The soup now changes from mostly orange to a colorful mixture with wilted green spinach woven between the dumplings and mushrooms. The broth remains creamy while the lime gives the finished soup a fresher balance.

  7. Transfer one serving of the finished soup into a bowl with 4 dumplings and a generous amount of creamy broth and mushrooms and wilted spinach. Arrange the dumplings casually so they overlap slightly and sit at different angles.

Finish the single portion with sliced scallion greens and cilantro leaves scattered unevenly over the surface. The final soup should look homemade with irregular dumpling positions and soft wilted greens and subtle streaks of red curry oil.

Notes

Pro Tips:

  • Use full-fat coconut milk for the creamiest broth because light coconut milk can make the finished soup noticeably thinner.
  • Keep frozen dumplings frozen until they enter the simmering broth so their wrappers stay firm and are less likely to tear.
  • Adjust the curry paste to your preferred heat level while remembering that coconut milk will soften some of its spicy flavor.
  • Add lime juice only near the end because its fresh acidity tastes brighter when it does not simmer for an extended time.

Storage: Allow leftover Creamy Thai Dumpling Soup to cool before transferring it into airtight containers. Refrigerate the soup for up to 3 days and keep it chilled until you are ready to reheat it.

The dumpling wrappers will continue absorbing broth during storage and therefore they can become softer over time. For the best texture store the cooked dumplings separately from the broth when possible and combine them during reheating.

Reheat the soup gently until steaming hot and avoid a hard boil because vigorous bubbling can break delicate dumpling wrappers. Add a small splash of broth or coconut milk if the soup becomes thicker after refrigeration.

Freezing the broth without the dumplings works better than freezing the completely assembled soup because dumpling wrappers may become overly soft after thawing. Freeze the broth for up to 2 months and add fresh frozen dumplings while reheating.
