Description

Creamy Southwest Chicken Soup is one of the best easy dinner ideas for busy families who love bold flavors and comforting meals. This quick and simple recipe combines tender shredded chicken with black beans and sweet corn in a rich creamy broth seasoned with Southwest spices. It makes a healthy and satisfying choice for weeknight dinner or meal prep and is also perfect for a casual party or cozy holiday gathering. Every spoonful brings creamy texture and homemade flavor.

Ingredients

  • 2 medium chicken breasts (about 1 pound total) Boneless skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 medium onion Yellow onion
  • 1 medium pepper Red bell pepper
  • 3 cloves Garlic
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 3/4 teaspoon or to taste Salt
  • 1/4 teaspoon Black pepper
  • 3 cups Low-sodium chicken broth
  • 1 can (10 ounces) Diced tomatoes with green chilies
  • 1 can (15 ounces) drained and rinsed Black beans
  • 1 cup frozen or drained canned corn Sweet corn
  • 4 ounces softened and cut into small cubes Cream cheese
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons chopped Fresh cilantro

Instructions

  1. Peel the yellow onion and cut it into small irregular pieces. Remove the stem and seeds from the red bell pepper and chop it into pieces roughly the same size as the onion. Peel and mince the 3 garlic cloves into smaller pieces.

Keep the chopped onion and red pepper and minced garlic in separate groups so they can be added at the right moments. The vegetables should look naturally hand-cut rather than perfectly uniform because those small differences create a homemade texture in the finished soup.

  2. Add the olive oil to a large pot over medium heat and then add the diced onion and red bell pepper. Cook for about 4 minutes while stirring occasionally until the onion starts turning translucent and the pepper begins softening around the edges.

Add the minced garlic and chili powder and ground cumin and smoked paprika and salt and black pepper. Stir for another minute until the vegetables are lightly coated in the reddish seasoning and the garlic becomes fragrant. The vegetables should look softened and glossy with scattered darker spice patches.

  3. Pour the chicken broth and the entire can of diced tomatoes with green chilies into the seasoned vegetables. Stir gently to loosen the spices and combine them with the liquid. Add the drained black beans and sweet corn and then nestle both whole chicken breasts into the soup so they are mostly submerged.

Bring the soup to a gentle simmer and cover the pot. Cook for approximately 15 to 18 minutes until the chicken reaches an internal temperature of 165°F and the vegetables become tender. The broth will develop a warm reddish-orange color while the chicken changes from pink and translucent to fully opaque and cooked.

  4. Remove the fully cooked chicken breasts from the pot and transfer them to a clean plate. Allow them to cool slightly and then pull the meat apart into uneven bite-sized shreds using two forks. Some pieces can be slightly thicker because they will provide satisfying texture in each spoonful.

Return all the shredded chicken to the simmering pot and gently fold it through the broth and vegetables. The soup should now appear fuller and heartier with visible chicken strands spread between the black beans and golden corn kernels.

  5. Reduce the heat to low and add the softened cream cheese cubes to the pot. Stir gently as the cream cheese starts melting into pale ribbons and then continue stirring until it becomes mostly incorporated into the hot broth.

Allow the soup to warm for another 2 to 3 minutes without a vigorous boil. The reddish broth will gradually transform into a thicker golden-orange mixture that clings lightly to the shredded chicken and vegetables. Stir in the lime juice and taste the soup before adjusting the seasoning if needed.

  6. Remove the pot from the heat and give the soup one final gentle stir. Divide the finished soup evenly among 4 serving bowls and make sure each bowl receives shredded chicken and black beans and corn along with plenty of thick creamy broth.

Sprinkle the chopped fresh cilantro over the portions just before serving. The finished soup should look rich and homemade with irregular chicken strands and bright corn kernels and soft black beans peeking through the golden-orange surface. Serve while warm and enjoy the creamy texture with the gentle Southwest spice flavor.

Notes

Pro Tips:

  • Soften the cream cheese before adding it to the soup because room-temperature pieces melt more smoothly into the warm seasoned broth.
  • Keep the soup at a gentle simmer while cooking the chicken so the meat stays tender and the black beans do not break apart.
  • Taste the soup after adding the lime juice because its acidity brightens the cream cheese and balances the smoky Southwest spices.
  • For a thicker consistency let the finished soup rest briefly off the heat so the creamy broth settles around the chicken and beans.

Storage: Refrigerating leftover Creamy Southwest Chicken Soup is easy and convenient for busy weekdays. Allow the soup to cool slightly and transfer it to shallow airtight containers before refrigerating within 2 hours of cooking. Store it at 40°F or below and enjoy within 3 to 4 days for the best quality and food safety.

For freezer storage divide the cooled soup into individual freezer-safe containers and leave some space at the top for expansion. Freeze for up to 2 to 3 months for the best flavor and texture. Cream cheese may separate slightly during freezing but gentle stirring during reheating can help restore a smoother consistency.

When you are ready to reheat refrigerated soup transfer your desired portion to a saucepan and warm over medium-low heat while stirring occasionally. Add a small splash of chicken broth if the soup has thickened during storage. Heat until the center reaches 165°F and the chicken and vegetables are steaming hot throughout.

For frozen portions thaw overnight in the refrigerator before reheating whenever possible. Warm slowly rather than bringing the soup to a vigorous boil because very high heat may cause the creamy base to separate. Avoid repeatedly reheating the same batch and instead warm only the amount you plan to eat.

For meal prep store the soup in individual portions so it can be enjoyed throughout the week without reheating the entire batch. Keep fresh cilantro separate until serving because adding it just before eating preserves its bright flavor and color.
