Description

Chicken Parmesan Toast Bites are an easy and quick way to turn familiar Italian flavors into a simple handheld meal and Golden toast holds juicy seasoned chicken plus bright marinara and melted mozzarella with Parmesan on top and These best little bites feel hearty yet balanced and can fit a healthy weeknight dinner plan and They also work for meal prep plus holiday gatherings plus potluck tables plus brunch spreads and any casual party where warm finger food disappears fast.

Ingredients

  • 2 medium breasts about 1 pound total Boneless skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1 small baguette cut into 12 slices French baguette
  • 3/4 cup Marinara sauce
  • 1 cup Shredded mozzarella cheese
  • 1/4 cup Finely grated Parmesan cheese
  • 2 tablespoons torn Fresh basil

Instructions

  1. Rub both chicken breasts with olive oil plus Italian seasoning and garlic powder and salt and black pepper until the surfaces look lightly glossy and speckled. Keep the two breasts slightly offset so the seasoning coverage looks natural rather than perfectly even.
  2. Bake the two seasoned chicken breasts until the centers are fully cooked and the outside changes from pink to opaque with lightly browned edges. Let the breasts rest briefly so the juices settle and the surface stays moist.
  3. Cut the small baguette into exactly 12 irregular slices and dice both rested chicken breasts into small uneven pieces. Separate the bread loosely while keeping the chicken piled to one side so the two textures remain distinct.
  4. Spread the 12 baguette slices across a sheet pan with natural spacing then spoon marinara over each piece and add all diced chicken. Scatter mozzarella and Parmesan unevenly so some tomato and chicken remain visible around the edges.
  5. Bake the 12 assembled bites until the bread edges turn golden and the mozzarella melts into uneven strands with small browned Parmesan patches. The toppings should settle into the bread while a few chicken pieces remain visible through the cheese.
  6. Transfer a single portion of 3 bites from the batch of 12 to a white plate and tear basil over the melted cheese. Cut one bite in half so the crisp toast plus saucy chicken and melted cheese layers show clearly.

Notes

Pro Tips:

  • Slice the baguette about half an inch thick so each base becomes crisp yet remains sturdy enough to hold the saucy chicken.
  • Leave a narrow border around the sauce so the bread edges brown well and give every bite a clear contrast in texture.
  • Dice the cooked chicken into small uneven pieces so it stays on the toast and creates a natural homemade appearance.
  • Let the finished bites rest for two minutes before serving so the cheese settles slightly while remaining soft and stretchy.

Storage: Cool leftover Chicken Parmesan Toast Bites completely before storing them so trapped steam does not soften the bread. Place the bites in a shallow airtight container with parchment between layers and refrigerate them for up to three days. Reheat the bites on a baking tray until the cheese is hot and the bread edges regain their crisp texture. For longer storage freeze the cooled bites in one layer then transfer them to a sealed freezer container for up to one month.
