Description

Ingredients

  • 2 medium breasts about 1 pound Boneless skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 medium diced Yellow onion
  • 3 cloves minced Garlic
  • 1 1/2 cups Red enchilada sauce
  • 4 cups Chicken broth
  • 1 can 14.5 ounces Diced tomatoes
  • 1 can 15 ounces drained and rinsed Black beans
  • 1 cup Corn kernels
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 3/4 teaspoon Kosher salt
  • 1 cup Shredded cheddar cheese
  • 1 medium diced Avocado
  • 2 tablespoons chopped Fresh cilantro


Instructions

  1. Dice the onion into irregular small pieces and mince the garlic so both soften at a similar pace. Cook them with the olive oil until the onion turns translucent at the edges and the garlic looks glossy while the pieces shift and overlap naturally.
  2. Pour in the enchilada sauce and chicken broth then add the tomatoes and cumin and chili powder and salt so the pale onion mixture becomes a deep red soup base. Nestle exactly 2 chicken breasts into the liquid and simmer until the chicken turns fully opaque and the broth looks slightly thicker around the edges.
