Description

Instructions

  1. Beat the softened butter with the packed brown sugar until the mixture changes from dense and separate to pale and fluffy. The sugar should look partly dissolved while small uneven ridges remain across the creamy mixture.
  2. Blend in the two eggs and vanilla then fold in the flour mixture with the milk until a thick smooth batter forms. Scatter in the finely diced apple and fold just until the pieces sit unevenly through the batter with some still visible near the surface.
  3. Scoop the thick batter into exactly 12 cupcake liners until each one is about two thirds full. Leave the portions slightly uneven so the apple pieces and batter settle naturally rather than forming identical smooth rounds.
  4. Bake the 12 filled liners until the batter rises into soft domes and changes from glossy tan to matte golden brown. The tops should show tiny cracks and scattered darker apple spots while the cupcakes remain slightly different in height.
  5. Beat the softened cream cheese with powdered sugar and part of the caramel sauce until the mixture becomes thick and pale with a soft caramel tint. The frosting should hold loose peaks with slightly uneven folds rather than looking perfectly stiff.
  6. Place one cooled cupcake on a white plate and add a generous uneven swirl of caramel cream cheese frosting. Drizzle a little caramel across the top then tuck in one thin apple slice so the soft crumb and creamy topping look clearly homemade.
